Rosemary is a lovely warming herb perfect for chilly days helping to improve circulation to keep fingers and toes warm, and bring oxygenated blood to the brain to improve focus and memory. I snipped in a few pine needles too for vitamin C.
O, Memory Shortbread, wi’ rosemary’s grace,
A treat for the mind, a smile on the face.
Wi’ butter sae rich, and sugar sae sweet,
A taste o’ Scotland, a culinary feat.
But mair than a treat, a gift for the soul,
Sharpenin’ the wit, makin’ the spirit whole.
For rosemary’s magic, they say it is true,
To stir the mind’s fire, and memories anew.
Sae raise a wee dram, to this shortbread sae fine,
May it nourish the brain, and make memory shine.
May it banish the fog, and clear the mind’s eye,
And fill us wi’ wisdom, as the years slip by.
The shortbread recipe is from the wonderful Becky Excell’s website glutenfreecuppatea.co.uk. I added the rosemary and pine needles into the finished biscuit dough before I rolled it out.
